Zucchini cupcakes/ Cupcake aux courgettes
This is my first post, as a mother of two picky kids I am always looking for healthy meal ideas for kids. Struggling a little bit to find something which is really corresponding to my type of cooking, I thought that I should try to create my own blog. I love to cook nevertheless I am not very good at taking pictures even if I realise that to be a food blogger nowadays one must be also a pretty good photographer. But lets try and see! So bon appetit!
Today, Zucchini cupcakes with tomatoes/basil topping
For 8 cupcakes
- 3 eggs
-150 g of flour
-1/2 packet of baking powder
-5cl sunflower oil
-15 cl warm milk
-80g comté or emmental cheese
-50g of parmesan
-2 small zucchini
-200g cooked ham
-1 tsp parsley
-salt and pepper
For the tomato/basil topping
-40 cl of tomato juice
-1 packet of jelly powder
-fresh basil
-2 Tbs of fresh cream
1-Preheat your oven at 180°C
2-Mix the flour, the eggs, the oil and the warm milk, add the comté or emmental and the parmesan, salt and pepper
3- Cut the zucchinis and the ham in small pieces, add to the mixture with the parsley
4-Pour in greased muffin tins and bake for about 30 minutes
5- In the meanwhile, pour the tomato juice in a small pot with the basil and the jelly powder. Bring to boil, remove from the stove, add the cream and let it cool down in the fridge for 3 hours.
6-When the jelly is solid, spoon it in a piping bag and start the decoration of the zucchini muffins.
Serve with a green salad or for kids better with cherry tomatoes and green olives!
Result: My three years old son did not touch it, he was too busy eating the tomatoes, cucumber and olives next to it but my four years old girl ate everything, she did not enjoy so much the tomato/basil frosting maybe more relevant for grow ups or children with already a taste for spicy food.

Ceci est mon premier post donc j'espère que vous serez indulgent. Ce blog vient juste de naitre. J'essaie sans cesse de trouver la recette que mes deux enfants mangeront sans problème (ils sont en effet assez difficiles) et que nous parents appréciront aussi. Donc pourquoi pas les conserver sur un blog! Je ne suis pas trés bonne en photographie donc je vais faire des efforts mais ne pourrais pour sûr pas rivaliser avec toutes les oeuvres d'art que l'on trouve sur la toile. Bon appétit quand même!
- 5 cl d'huile de tournesol
- 13 cl de lait
- 80 gr de comté ou emmental
- 200 gr de jambon
- 1 cc de persil ciselé
- sel, poivre du moulin
1-Préchauffer votre four à 180°C.
