A classical: chicory with ham in bechamel sauce/ Un classique: Endives au jambon à la béchamel
Today a classical which is always enjoyed, chicory rolled in ham and baked in béchamel sauce. Raw chicory is always a difficult vegetable to include in kids meal but cooked they are losing their slight bitterness and even get relatively sweet . In gratin, rolled in ham with a creamy béchamel sauce and with a cheese topping, it has everything to be attractive for kids.
For 4 persons
For the chicory/ham rolls
8 chicory heads
8 cooked ham slices
100 g grated cheese like Emmental
For the Bechamel sauce
70 g butter
70 g flour
1 l milk
salt, pepper, pinch of nutmeg
1- Cook the chicory heads for 15 minutes in boiling water
During this time, prepare the Bechamel sauce:
2- Boil the milk
3- Melt the butter in an other pot,
4- When the butter is completly melted, add all the flour in once
5- Stir with a spatula or a whisk, do not let it become brown, this is call a " white roux"
6- Out of the stove, add the hot milk to the roux, stir well
7- Return the pot to the stove, bring it to boil again
8- Do not stop to stir up to the time that the Bechamel seems thick enough
9- Remove the chicory stalks that you have boiled from the pot, let them cool down
10- Once cool enough , press them firmly inside a strainer to remove most of the water.
11- Roll a slice of ham around each of the chicory heads
12- Place each roll in a large baking dish
13- Pour the Bechamel sauce over the ham and chicory rolls
14- Cover with grated cheese
15- Bake for 20 minutes until the cheese is golden brown
Aujourd'hui un classique que les enfants normalement aiment bien et les parents aussi, les endives au jambon. C'est un repas assez équilibré et qui peut se servir en plat unique ou avec une une petite salade à côté.
Pour 4 personnes
Pour les endives au jambon
8 endives
8 tranches de jambon
100g d'Emmental rapé
Pour la sauce Béchamel
70g farine
70g beurre
1L de lait
sel, poivre, noix de muscade
1- Faire cuire les endives 15 min dans de l'eau bouillante salèe
2- Pendant ce temps, commencez à preparer la Béchamel, faites bouillir le litre de lait
3- Faites fondre le beurre dans une autre casserole
4- Une fois le beurre fondu, ajoutez-y la farine d'un coup
5- Remuez avec une spatule ou un fouet en évitant que le melange ne se colore
6- Hors du feu, versez le lait chaud sur le roux, remuez
7- Remettez la casserole sur le feu et laisser bouillir. En ne cessant de remuer, laissez le mélange s'épaissir.
8- Quand la sauce a la consistance voulu, retirez du feu
9- Ajoutez le sel, poivre et noix de msucade
10- Enroulez les tranches de jambon autour des endives cuites et essorées
11- Mettez les dans un plat à gratin et nappez de sauce Béchamel
12- Recouvrir de fromage rapé
13-Mettre à gratiner pendant 20 minutes
